This cheesy chicken and broccoli rice casserole is the perfect weeknight dinner. It’s ready in about 30 minutes, requires simple ingredients, and turns broccoli into pure comfort food!
An easy meal in one pot!
In my house, washing dishes is the least favorite chore of everyone in my family. So when I can find a recipe that doesn’t leave a lot of pans to wash, that’s a plus!
Cooked broccoli is one vegetable that all my kids will eat, especially when topped with cheese. So, this Chicken Broccoli and Cheese Rice was an instant hit with the whole family.
I love that it has protein, grains, and vegetables in one dish. But of course you can always serve it alongside vegetables or salad.
How to make a rice tray with chicken and broccoli
Prep – Dice the onion and cut the chicken into 1-inch or smaller pieces. Sauteed – Meanwhile, heat the oil in a large frying pan over medium-high heat. Add chicken and cook until browned, about 4 minutes. Add the onions and cook for another 4 minutes.
Rice – Add garlic, curry, salt, pepper, uncooked rice, and chicken broth. Bring to a boil, then simmer, covered, over medium heat for about 12 minutes, stirring occasionally.
Broccoli – While the rice is cooking, wash and chop the broccoli. Stir it into the pan. Cover and cook for another 4-5 minutes, stirring once, until the broccoli and rice are tender.
Cheese – Add the Parmesan cheese, then sprinkle the cheddar cheese on top. Reduce the heat to low, then cover and cook for 2-3 minutes, or until the cheese melts.
Store any leftovers in an airtight container in the refrigerator for 3-5 days.
Differences:
If you don’t want to use raw chicken, you can use shredded roast chicken instead. Fry the onions in olive oil, then add the chicken and broccoli. You can use frozen broccoli, but we definitely prefer the texture of fresh broccoli florets. For a crunchy topping, mix breadcrumbs or cornflakes with melted butter and sprinkle on top. Grill them for 3-5 minutes, watching them closely. For an extra hearty dish, you can add a can of mushroom or cream of chicken soup (or any “cream of soup”) when adding the broccoli.
