How to make cornflakes with peanut butter
Prep – Place silicone liners or parchment on cookie sheets or on your counter. Measure the corn flakes. Sugar mixture – Combine corn syrup and sugar in a saucepan or large bowl. Cook over medium or medium-high heat until the sugar dissolves.
Combine – Add peanut butter, then vanilla. Carefully stir in corn flakes.
Form – Quickly pour the mixture by tablespoonfuls onto the silicone liners. (I like to use a cookie scoop.) When cool, they will be set.
Store candy in an airtight container for up to a week. It is very sticky, so I recommend placing wax paper between layers.
Pro Tips:
If you are using chunky peanut butter, you will need a full cup instead of just 3/4 cup. When measuring viscous liquids like corn syrup (or even peanut butter), first spray your measuring cup with cooking spray. Or use this handy measuring cup. Make sure to use regular cornflakes, not frozen ones. Work quickly after adding the cornflakes, the mixture starts to come together very quickly!

For extra crunch, add some finely chopped roasted peanuts. You can make peanut butter cornflake bars instead. Simply press the hot mixture into a greased 8- or 9-inch square pan. For Christmas, add some green gel food coloring, shape the mixture into a wreath, and decorate with red M&Ms. You can’t go wrong drizzling the dessert with melted milk or dark chocolate.

Measure the corn flakes and set aside. Spread silicone liners or parchment paper on your table or countertop. In a large saucepan, heat the corn syrup and sugar over medium heat until the sugar dissolves. Add peanut butter, then vanilla. Remove the pan from the heat and gently stir the cornflakes into the peanut butter mixture. Scoop them down quickly by stacking spoons on the liners. (I use 1 1/2 tablespoons of cookies.) Let the dessert cool at room temperature for 20-30 minutes or until set.
Notes
– Spray your measuring cups with nonstick cooking spray, and the corn syrup and peanut butter will slide right out!
-We like our dessert to have a higher percentage of sweet peanut butter than corn flakes. If you want a texture similar to that of unbaked cornflake cookies, add an additional cup or two of cornflakes.
-If you want to make dessert quickly, place the silicone liners inside a cookie sheet and place it in the refrigerator or freezer for a few minutes.
